We are getting married in cozumel next June and want to spend 7 days of our honeymoon in tulum. We are looking for low key, great beach and close activities. Tulum seems perfect. We are deciding between la zebra and ana y jose. We like the huge rooms and the beach beds at ana y jose, were are looking at the Arena suite. The zebra salsa lessons sound great and the cabanas seem cool. I am concerned about the privacy at the cabanas 2, 3, or 4. The bed is right in front of the door. I am not sure how much we would use the pool, though at ana y jose. Are the big room is worth the extra $? Any insight would be appreciated.

I have never stayed at either of those two resorts.
Have you looked at Dan's place, Xamach Dos?
For exclusivity and peace it can't get much better.
It is a bit of a drive, 4KM past the bridge on the way to Punta Allen.
Worth the drive in my opinion.

What exactly are you looking for, activities-wise? Most places in Tulum are all about peace and quiet, doing nothing but flopping around on the beach and talking/reading/walking (or canoodling, since you're on your honeymoon).
If you want something a bit more "fun", I think La Zebra fits the bill. If you're considering spending the extra dinero for AyJ, I think maybe the master suite at LZ would suit your space needs. I haven't yet stayed at either, but have visited both. AyJ is the "grande dame" of the beach road, and their rooms are more of a fancy hotel style, not the real "toes in the sand" feel of the places with casitas (LaZ is one of the latter). I don't mean to disparage AyJ at all, everyone I know who's stayed there has liked it, it's just not my style.
But if you really want privacy, true privacy, you might want to check out some smaller places, farther down the beach (or in Sian Ka'an, as is Xamach Dos).

AYJ's has been getting some bad reviews lately, mostly due to construction mess..but the beachclub is also getting low reviews for the quality of food/drink vs cost.

Ayup...........I am home, in the cold wet West Coast.
And I now have a cold for crying out loud!
Sooo, I am now very curious........do I know you Gale?
Should I remember something I seem to have forgotten?

I'd vote for La Zebra for ya. More fun atmosphere, IMO, and it sounds like it might be more your style of place than AyJ which is bigger and as BR said, more hotel-y. I think you'd like La Zebra.
Might also depend on what cabana you can get, too.
